Corn, Tomato And Black Bean Salad

Description :
A salad packed with flavor! Great for picnics and barbeques.
Ingredients :
- 3 tablespoons oil
- 3 tablspoons white balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon chili powder
- 2 pounds tomatoes, cut into 3/4 inch pieces, drained
- 2 cans (15.5 oz. each) black beans, rinsed and drained
- 1 can (11 oz.) Mexicorn, drained
- 1/2 cup chopped red onion
- 1/3 cup sliced fresh basil
Directions :
- In large serving bowl, whisk oil, vinegar, honey, mustard, salt, and chili powder until until blended and thickened.
- Add tomatoes, black beans, corn, and onion. Toss.
- Cover and refrigerate, stirring occasionally until chilled, at least 1 hour.
- Just before serving, gently stir in basil.
