Corn, Tomato And Black Bean Salad

Description :
A salad packed with flavor! Great for picnics and barbeques.
Ingredients :
  • 3 tablespoons oil
  • 3 tablspoons white balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 2 pounds tomatoes, cut into 3/4 inch pieces, drained
  • 2 cans (15.5 oz. each) black beans, rinsed and drained
  • 1 can (11 oz.) Mexicorn, drained
  • 1/2 cup chopped red onion
  • 1/3 cup sliced fresh basil
Directions :
  1. In large serving bowl, whisk oil, vinegar, honey, mustard, salt, and chili powder until until blended and thickened.
  2. Add tomatoes, black beans, corn, and onion. Toss.
  3. Cover and refrigerate, stirring occasionally until chilled, at least 1 hour.
  4. Just before serving, gently stir in basil.
