White Chocolate Raspberry & Oatmeal Bars

Ingredients :
  • 1 1/2 cups old fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup cranberry-raspberry applesauce
  • 1/2 cup seedless raspberry preserves
  • 3 tablespooons water
  • 1 tablespoon lemon juice
  • 2 tablespoons white chocolate chips, melted
Directions :
  1. Preheat oven to 375°F.
  2. Line 8 inch square pan with foil, then coat with cooking spray.
  3. Combine oats, flour, baking powder, and salt.
  4. On high speed, beat butter, sugar, 3 tablespoons water, and vanilla until fluffy.
  5. On low, beat in oats mixture.
  6. Reserve 1 cup dough.
  7. Evenly press remaining dough onto bottom of pan.
  8. Combine applesauce, preserves, and lemon juice.
  9. Spread over dough in pan, leaving 1/2 inch border.
  10. Crumble reserved dough over top.
  11. Bake 1 hour, or until lightly browned and set.
  12. Cool completely in pan.
  13. Remove from foil and drizzle with chocolate.
