Creamy Pasta Primavera

Ingredients :
  • 3 cups penne pasta, uncooked
  • 2 tabelspoons light zesty Italian dressing
  • 1 1/2 pounds skinless chicken breasts, cut into 1 inch pieces
  • 2 zucchini, cut into bite size pieces
  • 1 1/2 cups fresh asparagus, cut up into 1 inch lenghts
  • 1 red pepper, chopped
  • 1 cup fat free reduced sodium chicken broth
  • 4 oz. (1/2 of 8 oz. package) Neufchatel Cheese, cubed
  • 1/4 cup grated Parmesan cheese
Directions :
  1. Cook penne pasta in large saucepan according to package directions.
  2. Meanwhile, heat dressing in large skillet on medium heat.
  3. Add chicken and vegetables, then cook 10-12 minutes, or until chicken is done, stirring frequently.
  4. Add broth and Neufchatel cheese. Cook 1 minute or until cheese is melted, stirring constantly.
  5. Stir in Parmesan.
  6. Drain penne pasta, then return to pan.
  7. Add chicken mixture and toss lightly.
  8. Cook 1 minute or until heated through.
  9. Sauce will thicken on standing.
