Baby Arugula Salad with Zesty Lemon Garlic Dressing
1 pound baby arugula you can use ‘adult’ arugula (2 to 3 bunches.)
juice of 1 lemon
3-4 tablespoons olive oil
1/4 heaping teaspoon of kosher or coarse salt
1 Garlic clove crushed or minced.**
2 ounces Parmesan cheese
In a small bowl, combine lemon juice with olive oil, coarse salt, and garlic; whisk to combine. Wash arugula and remove stems if you are using the Adult variety; place leaves in a large bowl toss with dressing making sure the dressing covers everything. With a vegetable peeler, shave Parmesan cheese over arugula. Enjoy!
**If you are sensitive to raw garlic just crush the garlic clove with a knife and put into the dressing but do not put into the salad you still get the flavor but it is not too much!
