Chicken along with other poultry was rarely served on the cattle drives. Although, cowboys spending anytime at the ranch often ate chicken. It is versatile being cooked in many fashions from the different cultural influences who moved west. Soul food, Southern, Cajun, Spanish or Barbecue, chicken has been always one of those treats to serve during family gathering.  

2 lbs   Chicken wings 

12 oz  Chipotle Maple BBQ Sauce 

1/3 cup cider or white vinegar

1/4 to 1/2 tsp cayenne pepper or your favorite chili powder.

Salt and black pepper 

Mix the sauce, vinegar and chili in a small saucepan and heat thoroughly on low heat, until it simmers. Then turn it off and allow it too cool.
Wash the chicken and cut the skin of each one in 2 or 3 places. Place in a large bowl with half the cooled sauce, and stir well to coat. Let marinade for 6 to 8 hours, stirring occasionally.
Remove chicken from sauce, dry with paper towels, and season with salt and pepper. Grill on medium heat for 10 to 15 minutes or until done. Works well in a basket, turning often. If your basket is small, grill in two batches.If grilled directly, watch that they don’t burn or fall through you grill slats. 
Place cooked pieces in remaining sauce and serve. 
If you have never had chipotle, it is a mild chili pepper that often is dried and crushed into a fine powder. Adding this making any barbecue mix is a superb ingredient giving the flavor a nice bite without over powering. However, you don’t have to make it. Chipotle Maple BBQ Sauce:   
Ingredients: Tomato Puree (water, tomato paste), Sugar, Cider Vinegar, Honey, Dark Molasses, Salt, Brown Sugar, Pure Maple Syrup, Spices, Corn Starch, Ground Chipotle Peppers, Hot Sauce (peppers, vinegar, salt), Natural Flavors, Onion Powder, Garlic Powder, Natural Caramel Color, Orange Peel.
