Strawberry Delight {A Mothers Day Dessert}

Good Morning Everyone and Happy Monday!!! I hope everyone had a wonderful Mothers Day. We had a nice relaxing day and a great meal. We grilled out and I made a wonderful dessert, Strawberry Delight. This is one of my favorite desserts and perfect for summer.


I had added a teaser photo yesterday on face book and I promised that I would post the recipe today. If you love strawberries then this is the perfect dessert for you. This dessert is so pretty and would make the perfect addition for any summer get together, barbecue or church potluck.

6 021 This recipe starts with a buttery pecan shortbread cookie crust that is baked and then topped with a creamy filling made with cream cheese and dream whip. Top with Strawberry pie filling and your done. This dish looks like you spent tons of time on it but really it takes no time to throw together.

You will need 2 cans of strawberry pie filling, but since it was so pricey at $3 a can. I used just one. I think I will try my hand at homemade strawberry pie filling next time to keep the cost at a minimum.
 I was thinking that you could experiment and try other pie fillings such as blueberry or cherry. But by far Strawberry is my all time favorite. I also wanted to show you what I got for mothers day and then onto the recipe.

We spent the day just piddling around and went for a nice drive. My son made me a mothers day card and some coupons at school. He did such a awesome job. My Mackenzie wrote a story for me.
She typed it up on the computer, printed it and added her picture. She did this all by herself and it was such a nice surprise. She told me mommy your a good cooker and I love you. It was so sweet I had to take a picture to share with everyone.

I also got a bouquet of flowers, some very needed cooking utensils and a set of Paula Deen knives that I have had my eye on. I loved all of my gifts, but the homemade gifts from the kids are my favorite ones. They spent so much time making them and those are the best gifts. I love being a mom!!! OK as promised finally onto the recipe.


25 001 These are the ingredients you will need: All purpose flour, powdered sugar, real butter, cream cheese, dream whip (add milk & vanilla extract to make the dream whip), pecans and strawberry pie filling.
15 Picnikcollage1 Start by preheating the oven to 350 degree. Prepare crust by adding the butter and flour to a mixing bowl and blend using a large fork or pasty blender. Add chopped pecans and mix. Press mixture into the bottom of a 9 x 13 inch pan.

Bake at 350 degrees for 18-20 minutes or until light golden brown. When done remove from oven and let cool.

13 Picnikcollage2 While the crust is cooling prepare the filling. Prepare dream whip according to package directions (adding milk & vanilla extract per package directions), whip until soft peaks form then set aside.

Mix the cream cheese and powdered sugar together using a electric mixer. Add prepared dream whip to cream cheese mixtures. When the crust is completely cooled add the cream cheese filling on top of the crust

and spread evenly. Top with strawberry pie filling

As you can see I stretched one can of pie filling. Chill for at least 4 – 6 hours. .

I piped some whipping cream on top and added a fresh strawberry.

10 025 After it chills dig in!!!!!!!!!!!! The buttery shortbread crust is so crispy and good. I just know your gonna love it!!!


Strawberry Delight

Crust:
3/4 – cup real butter, softened (1 stick + 4 tablespoons)
1 1/2 – cups all purpose flour
3/4 – cups pecans, chopped

Filling:
1 – 8 oz pkg cream cheese, softened

1 1/2 – cups powdered sugar
1 – envelope dream whip, prepared according to package directions or use 
1 – 8 oz container cool whip
2 – (21 oz) cans strawberry pie filling, or
one recipe homemade pie filling (recipe below)

Preheat oven to 350 degree. Prepare crust by adding the butter and flour to a bowl and blend using a large fork or pasty blender.

Cooks Note: I have included a recipe for homemade strawberry pie filling. Homemade is so much cheaper than buying canned filling. But if you’re in a pinch for time there’s nothing wrong with buying it already prepared. Dream Whip is located in the baking isle at the grocery store. Sometimes it can be found above powdered sugar and regular sugar. 

Canned Pie Filling Alternative: If you don’t want to go all homemade another option is to use fresh sliced strawberries and buy the strawberry glaze that you find in the produce section of the grocery store. They come in containers or a clear bag

Homemade Strawberry Pie Filling

1 – cup sugar
1 – cup water
3 – tablespoons cornstarch
3 – tablespoons strawberry gelatin
1 1/2 – cups sliced strawberries

In a medium saucepan, combine sugar, water, and cornstarch. Cook over medium high heat until it boils and thickens. You will know the mixture is thick enough when it coats the back of a spoon. Remove from heat, add gelatin and mix to combine. Add the sliced strawberries and cool slightly.
