As I sit and type this post it’s still a whopping 99 degrees at 8:00 pm. Ugh don’t you just love summer!!! We have been trying to keep cool any way possible. Usually it’s staying in the house and enjoying the AC with a big glass of iced tea. It’s so hot that no one really wants to do anything outside and I can’t say that I blame them.

Summers in Texas are brutal to say the least. I have been trying not to turn the stove on to much and if i do, it’s for a short period of time. Salads, no bake desserts, fruits and easy dinners have been on the menu at our house lately.

We’ve also been consuming a new favorite in our house, Watermelon Agua FrescaIf you are not familiar with this yummy drink let me explain. “Agua Fresca” means “fresh water”. Add fruit and you have a yummy fruit water.

16 009 In this case Watermelon Agua Fresca!! The kids and I love to go to our local Mexican supermarket called El Rio Grande. They have the freshest and lowest price on produce. Not to mention homemade flour and corn tortillas, Mexican pastries and lots and lots of different fruit waters. Some of my favorites are strawberry agua fresca, watermelon, mango and my favorite rice drink horchata.

I didn’t realize it was so easy to make your own agua fresca. I poked around online and found a recipe and adapted it just a bit to suit my own taste. Watermelon Agua Fresca is the perfect treat to make when you have lots of leftover watermelon. Plus right now watermelons are starting to drop in price as summer starts to come to an end.

Making it the perfect time to whip up a batch of this delicious water. If watermelon isn’t your thing then you can use this same method with cantaloupe, honey dew melon, pineapple or strawberries. You may have to adjust the amount of water and simple syrup for each of the different fruits. I am going to try my hand at Mango Agua Fresca next time. I cant wait!I’m hooked on this stuff.

If you have some leftover watermelon in the fridge go and make this fruity water, because I know your going to love it as much as I do.
13 002To get started you will first need to prepare a simple syrup. While the syrup is cooling cut up and seed your watermelon. A seedless watermelon can be used, but they are more expensive and much smaller than a regular sized one.
18 001 Measure the cut watermelon and the 1/2 cup simple syrup. Add everything to a blender and puree. Make sure all the ingredients are mixed together really well and all the watermelon is pureed. Pour mixture through a medium strainer into a bowl then pour into a pitcher.
